Roasted beets have a wonderful earthiness and take on a sweetness of their own. When the beets are cool enough to handle, use a dry paper towel and gently wipe away the thin skins.
How to Make It
Step 1
Preheat the oven to 400°F. Rub the beets with the oil, salt, and pepper. Wrap in foil.
Step 2
Roast at 400°F until tender when pierced with a fork, about 1 hour. Let stand until cool enough to handle. Peel and discard the skins. Refrigerate until needed.
