This big-batch-friendly cocktail celebrates summer’s juiciest stone fruit and most bountiful herb. Peaches contain two key antioxidants—lutein and zeaxanthin—good for eye health. Lemongrass paste (found near the fresh herbs) imparts aromatic, lemony luster.
Combine peeled and sliced peaches, fresh lemon juice, water, honey, and, if desired, refrigerated lemongrass paste in a blender. Process until smooth, about 1 minute. Pour peach mixture evenly into 4 highball glasses filled with ice. Add 1 oz. bourbon to each, and top each with 1/4 cup club soda. Gently stir until combined. Garnish with fresh Thai basil or sweet basil sprigs.
