Top crispy sweet potato skins with guacamole for a healthy take on classic potato skins.

How to Make It

1. Preheat oven to 400°F. Wrap sweet potatoes in foil; place on a baking sheet. Bake at 400°F until very tender, 50 minutes to 1 hour. Unwrap and set aside to cool.

2. Line a baking sheet with parchment paper. Cut potatoes in half lengthwise and scoop out flesh, leaving a 1/4-inch border (save the scooped-out flesh for another use). Place potato halves, skin-side up, on prepared baking sheet. Brush with oil and sprinkle with 1/8 teaspoon salt. Bake at 400°F until browned and crisp, 20 to 30 minutes.

3. Remove pan from oven; turn halves, and place, skin-side down, on baking sheet. Sprinkle each with 1 tablespoon cheese. Return to oven and bake until the cheese is melted, 8 to 10 minutes.

4. Meanwhile, mash avocado in a medium bowl. Stir in lime juice, garlic, and 1/8 teaspoon salt. Top sweet potato skins evenly with guacamole, tomato, onion, and, if desired, cilantro.
