If you don’t have Champagne vinegar, use white balsamic vinegar or red or white wine vinegar combined with a dash of granulated sugar.

How to Make It

Step 1

Using a vegetable peeler, shave zucchini and yellow squash into strips (about 1 cup zucchini and 1 cup yellow squash).

Step 2

Combine zucchini, squash, radishes, and remaining ingredients in a bowl; toss gently to coat. Serve immediately.
