We take the classic Greek-style home fries (usually fried in olive oil with lemon, oregano, and other spices) and translate them into oven-baked potato wedges. The oven temperature may seem too high, but don’t fear: The wedges are starchy and thick enough that they will cook through and get crisp without overbrowning.
3 (8-oz.) baking potatoes, each cut lengthwise into 8 wedges
1 tablespoon minced fresh oregano
1 1/2 tablespoons olive oil
1 teaspoon grated lemon rind
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon minced fresh oregano
2 teaspoons lemon juice
1 ounce crumbed feta cheese

How to Make It
Preheat oven to 450°F with a baking sheet in the oven. Combine potato wedges, 1 Tbsp. minced fresh oregano, olive oil, lemon rind, salt, and pepper in a bowl. Coat preheated pan with cooking spray. Add potato mixture to pan; bake at 450°F for 30 minutes, stirring after 15 minutes. Sprinkle with 1 tsp. minced fresh oregano, lemon juice, and crumbled feta.
