Save time in the morning by prepping the batch of perfect wheat berries and the grapes the night before. You can store the grapes in a microwave-safe container in the fridge. When ready to use, microwave grapes for 30 to 45 seconds before spooning them over your grains.
Preheat oven to 400°F. Toss together grapes, oil, and salt in a 12- x 15-inch baking pan. Bake in preheated oven, shaking pan occasionally, until grapes begin to blister, 15 to 17 minutes. Transfer grapes to a bowl, add vinegar, and toss to coat.
Divide wheat berries evenly among 4 bowls; top each serving with 1/2 cup roasted grapes, 1 tablespoon goat cheese, and 1 tablespoon chopped walnuts.
