You’ll often find silken tofu in shelf-stable packages on the Asian foods aisle. We call for Mori-Nu brand because one package will provide exactly what you need for this 3-day meal plan. The squeeze-pack of almond butter is convenient and contains only what you need for this recipe. But if you have almond butter in your pantry, just use 2 tablespoons.
3/4 cup fresh raspberries (about 3 oz.), divided
1/2 cup unsweetened almond milk
1/2 cup extra-firm silken tofu (such as Mori-Nu) (4 oz.)
2 dates, pitted
1 (1.15-oz.) packet almond butter (such as Justins)
3/4 cup ice cubes
Added sugars 0g

How to Make It
Set aside 3 or 4 of the raspberries for garnish, if desired. Process remaining raspberries, almond milk, tofu, dates, and almond butter in a blender until smooth. Add ice; process until smooth. Pour into a serving glass. Garnish with reserved raspberries, if desired.
