This simple guacamole recipe gets back to basics. Whip up this popular party dip for a crowd—and you'll be amazed at how quickly it disappears. Our recipe uses just a few ingredients, so the real star can shine: avocado. We let the onion and jalapeño macerate with the lime juice and salt to tame their flavors slightly. Be particularly sure to use avocados at peak ripeness.

1 1/2 tablespoons finely chopped white onion
1 tablespoon fresh lime juice
1 teaspoon finely chopped seeded jalapeño
1/2 teaspoon kosher salt
2 ripe avocados, coarsely chopped
1 tablespoon chopped fresh cilantro
