Cooking Light
Roast whole slices of lemon along with the asparagus for a beautiful look and sparkling, bright flavor. This side dish pairs well with fresh seafood, especially salmon or scallops.
How to Make It
1. Preheat oven to 450°F.
2. Toss asparagus spears, fresh lemon slices, oil, oregano, salt, and pepper on a large rimmed baking sheet. Bake at 450°F, shaking the pan occasionally to toss, until asparagus is crisp-tender, 13 to 15 minutes.
