These rich, dense brownies boast an intense chocolate flavor and a lovely crunch from the toasted pecans. There is no added sugar—the sweetness comes from dried dates.

How to Make It

1. Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper; set aside.

2. Place dates and hot water in a blender and process until smooth, about 1 minute. Measure date paste to 3/4 cup; reserve any leftover paste for another use. Transfer date paste to a large bowl; add egg, oil, and vanilla, and stir until smooth. Gradually add flour, cocoa, and salt, and stir until blended. Fold in chopped chocolate. Spoon batter into prepared pan, smoothing top with an offset spatula. Sprinkle with chopped pecans.

3. Bake at 350°F until brownies begin to pull away from sides of pan, 30 to 35 minutes. (These are fudgy brownies, so a wooden pick won’t come out clean.) Let cool in pan completely, about 1 hour. Slice into 12 bars and serve.
