This all green salad is family-friendly—packed with crunchy and refreshing cucumber, celery, and romaine lettuce. You can prep all of the ingredients ahead, and even whisk the dressing together, but wait to dress the salad until shortly before serving. Don't have romaine? Feel free to substitute with any mild-flavored lettuce you have on hand.
2 tablespoons fresh lemon juice
1 tablespoon minced fresh chives
1 teaspoon sugar
3/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons olive oil
2 romaine hearts, chopped
1 cucumber, diced
1 celery stalk, diced
How to Make It
Combine lemon juice, chives, sugar, salt, and pepper; whisk in olive oil. Toss with chopped romaine hearts, diced cucumber, and diced celery.
