How to Make It

Step 1

Preheat broiler to high.

Step 2

Heat a small, 8-inch skillet over medium-high heat. Coat pan with cooking spray. Scatter chips into pan.

Combine salsa, cumin, and eggs in a small bowl; stir with a whisk or fork until well combined. Pour egg mixture evenly over chips in skillet. Sprinkle with tomatoes, scallions, and cheese. Cook 2 minutes over medium-high.

Step 4

Place skillet in oven. Broil just until eggs are set, about 1 minute. Serve with hot sauce, if desired.
