This Chicken Meat Loaf is also a clever way to try ground chicken if you've never had it, but because chicken is so lean, you'll need to boost flavor with big flavor ingredients like yellow mustard and ketchup. This recipe is a family favorite, popular with both kids and parents alike.

Traditional meatloaf can be greasy or dry, but this chicken meat loaf recipe gets a fun pop of flavor from soy sauce, and has the added benefit of a few veggies tucked into the loaf, like green onions and button mushrooms. Pair this recipe with roasted potatoes or a green salad for an easy weeknight dinner.

How to Make It

Preheat oven to 350°. Combine green onions, mushrooms, and garlic cloves in a food processor; process until ground. Add chicken breast halves; process until finely ground. Add panko breadcrumbs, soy sauce, salt, pepper, and egg; pulse. Shape mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Combine ketchup, mustard, and sugar; brush mixture over meat loaf. Bake at 350° for 45 minutes. Let stand 10 minutes. Slice.
