California dip — or French onion dip, if you rather — is typically made with two ingredients: powdered onion soup mix and sour cream. And while we love a classic, it's nice to freshen things up. Here, we've lightened the chilled dip by replacing sour cream with Greek yogurt and subbing dreamy caramelized onions for sodium-laden powdered soup. The caramelized onions are cooked low and slow, resulting in a sweet onion jam that’s 100% worth the effort. Scoop this dip up with crackers, crudité, or even a hot wing. 

How to Make It

Heat the oil in a small cast iron skillet over medium-low heat. Add the onions and stir gently to coat.

Sauté for 30 minutes, stirring often, until the onions are soft, fragrant, and golden brown. Set aside and let cool completely. 

In a medium-sized bowl, combine the caramelized onions and all remaining ingredients. 

Store in an airtight container in the fridge for 3 to 4 days or enjoy immediately. Garnish with additional chopped chives, caramelized onions, or a sprinkle of paprika.
