How to Make It
Heat the oil in a small cast iron skillet over medium-low heat. Add the onions and stir gently to coat.
Sauté for 30 minutes, stirring often, until the onions are soft, fragrant, and golden brown. Set aside and let cool completely.
In a medium-sized bowl, combine the caramelized onions and all remaining ingredients.
Store in an airtight container in the fridge for 3 to 4 days or enjoy immediately. Garnish with additional chopped chives, caramelized onions, or a sprinkle of paprika.
