Mexican street corn, better known as elotes, is one of our favorite ways to enjoy fresh corn. The authentic preparation douses chargrilled corn with salty cotija cheese, Mexican crema, mayonnaise, chili powder, garlic, and lime. It's incredible. And while we wouldn't dub this sweet and creamy air fryer chili-lime corn "elotes," we absolutely recommend it as a speedy and delicious side dish for taco and fajita nights. Lightly oiling each ear of corn helps crisp and caramelize the kernels in the air fryer. 

How to Make It

Preheat the air fryer to 400°F for at least five minutes.

Shuck corn, making sure to remove the silk threads from the cob. Trim the edges if necessary. Give each ear of corn one spritz of olive oil spray and use your hands to evenly distribute. 

Place the corn atop parchment paper or an oiled surface inside the air fryer to prevent sticking. Cook for 15 minutes, rotating halfway through. 

In a small dish, whisk mayonnaise, lime juice, lime zest, chili powder, and paprika. Taste and season the mixture with a pinch of salt, if desired. Set aside.

To plate, coat each ear of corn with the chili-lime sauce. Sprinkle with chopped green onions and additional paprika for a picture-perfect platter. Serve immediately with extra lime wedges.
