Don't let cauliflower's pale looks deceive you. This hearty vegetable can hold its own among some pretty strong flavors. Case in point: This garlic-thyme vinaigrette which is packed with taste, but still comes together about as fast as it takes the florets to cook.
How to Make It
Step 1
Bring a large saucepan of water to a boil; add cauliflower and shallots. Boil 6 minutes; drain.
Step 2
Combine olive oil, vinegar, garlic, thyme, salt, and pepper. Toss cauliflower and shallots with vinaigrette.
