Summer days are for sipping something refreshing—and what could be more refreshing than watermelon juice? A watermelon juice cocktail! Trader Joe’s, one of our favorite stores for unique snacks at bargain prices, just released a cocktail recipe using their sparkling watermelon juice and we’re definitely going to make a big batch of it this weekend! 

The store calls the sparkling watermelon juice “a summer’s day in a can,” and the “sweet and sparkling beverage of your warm-weather dreams.” We love this recipe because the not-from-concentrate sparkling watermelon juice has tight, crisp bubbles and zero added sugar. It’s absolutely delicious in this cocktail recipe, or as a mocktail (simply omit the vodka). Plus, the drink is a stunning bright pink color that just screams summertime. 

Here’s the recipe according to Trader Joe’s website:

  • ½ cup cubed watermelon, plus a few more cubes for garnish
  • Fresh mint
  • 4 oz. vodka
  • 1 can TJ’s Sparkling Watermelon Juice 
  • 1 lime, sliced

Instructions:
Muddle watermelon and a few mint leaves in a 2-cup measuring glass. Divide mixture among 2 old fashioned glasses. Fill the glasses with ice. Divide vodka among glasses, top up with sparkling watermelon juice, and stir just until combined. Garnish with a watermelon cube, more fresh mint, and a squeeze of lime. Cheers!
