Glazed Cocktail Meatballs
These mini meatballs are perfect for holiday parties and tailgating. We made them healthier by forgoing sodium-heavy ingredients like the usual ketchup and chili sauce and including whole-grain bulgur in place of breadcrumbs. You can also serve a larger portion of these meatballs for weeknight dinner. To up the kid-friendly factor, omit the ground red pepper in the glaze and serve with mashed potatoes (à la Swedish meatballs). For a tangier glaze, substitute cranberry sauce for the grape jelly.

Marinated Feta Skewers
If you can find a container of multicolored tomatoes, use those for the prettiest presentation.

Port of Call Punch
The muddling technique draws complex flavors from the lemon, making the beverage floral, bracing, and irresistible. A sprinkling of grated nutmeg on top adds a warm, soothing, fragrant layer to the punch, which is remarkably complex-flavored despite having only 6 ingredients. Ruby port has spent less time cask-aging than tawny port, and so is a little sweeter and fruitier, perfect in this recipe. This drink has a lower alcohol content than standard cocktails, a great quality in a punch that's meant to refresh as much as relax.

Tangy Lemon Cheesecake Bars
Classic lemon squares can contain up to 36 grams of sugar per piece. By putting a tangy cheesecake spin on ours, we’ve cut the sugar down to only 6 grams per pop. Your sweet tooth will agree that these bars are good enough to enjoy year-round.

Tricolored Beet Tart
Start your holiday meal with a simple yet gorgeous beet tart, topped off with tangy goat cheese, crunchy hazelnuts, and flaky sea salt. Par-bake the crust to get a lovely raised edge (what forms the shell of your tart) and ensure that the bottom will be cooked through. If you or your guests are not beet fans, substitute sweet potatoes: Wrap 4 (4-ounce) sweet potatoes in parchment paper, and microwave at HIGH 3 minutes. Then cool, peel, and slice. You can also sub feta for goat cheese and pecans or walnuts for hazelnuts.

Smoked Salmon Bites
If you're looking for an appetizer that will delight your guests with its gorgeous presentation and rich, delicious taste, the search stops here. These beautiful canapés start with a base of candy cane (or Chioggia) beet squares, whose alternating ruby and white rings are stunning. (You can add more color to the platter by alternating candy cane beet and golden beet slices.) The beet stays raw, so the slices are crunchy and sweet and hold up nicely. The jewel-like topping of easy-to-find salmon caviar turns what's truly a simple make-ahead nibble into an absolute work of art that'll make you the talk of your social circle.

The festive combo of cinnamon, vanilla, and figs make a tasty way to welcome the New Year, but this fantastic flavor trio will also keep you celebrating all fall and winter. Cheers!

Mini Raspberry Cheesecakes
We had the greatest success using a pan with 2 1/2-ounce cups, such as Chicago Metallic's 12-Well Mini Cheesecake Pan ($25). This pan has removable bottoms (similar to a tart pan) so that you simply push each cheesecake up to remove it. You can also bake them in a standard muffin tin; line it with foil liners for easier removal.

Buffalo-Brisket Sliders with Special Sauce
This is the burger everyone will be talking about and wanting the recipe for. It’s OK, you can demure and tell them it’s your secret recipe—we won’t tell. The mayo-based “special sauce” gets heat and sweetness from red pepper jelly; a briny edge from dill pickle relish; and a little lemon, onion, and garlic to balance it all out. Buffalo (also called bison) has a sweet and rich flavor and is a low-fat, nutrient-dense food. We mix in rich and flavorful brisket to maximize this burger’s taste and juiciness. Pressing each patty once it hits the hot pan helps develop a good sear that will lock in the burger juices.

Mini Cheese Balls
Save 108 calories, 7g sat fat, and 69mg sodium per serving over a traditional cheese ball. Almond milk cream cheese is delicately nutty, with a buttery-rich texture and zero grams of sat fat. Find it at Whole Foods stores nationwide. You can substitute 1⁄3-less-fat cream cheese, which adds 1.6g sat fat to each serving.

Honey Cider Cocktails
The cider-honey base of this beverage makes enough for both adult and kid twists: one with pale ale, the other with sparkling cider. Beer and cider are refreshing and lower in sugar and alcohol than stronger potions, which tend to go down a bit too easily.

New Classic Red Velvet Cake
Just the name "red velvet cake" suggests something elegant and rich—dramatic, supermoist layers of tinted chocolate cake coated in a dense, creamy white frosting. 'Tis the season for such decadent pleasures, right? Although it may be the time of year to splurge, it's hard to justify an 880-calorie, 57g-of-fat piece of cake. Ho-ho-holy cow! We had to find a better way to bake this favorite holiday cake and feel better about eating it, too.
Our secret weapon: red beets. Cooking the vibrant-red, naturally sweet vegetables with nonfat buttermilk and vanilla, and then pureeing them into a luscious cream adds an ultramoist, velvety texture to the cake that also allows us to use less oil and butter—a savings of 255 calories and 22g fat. Double bonus: The red beet color eliminates any need for artificial dye.

Gingery Shrimp Salad Bites
Pick up inexpensive Chinese soup spoons at Asian markets, or serve on rice crackers or in hollowed-out pieces of cucumber. The chives, an optional sixth ingredient, perk up the look but aren’t crucial to the flavor.

Spinach-and-Artichoke Dip
This recipe has been a staff favorite since we first tried it 13 years ago. It's rich, savory, and super creamy, with a nice hit of garlic. We made a few small tweaks—increased the amount of spinach and decreased the mozzarella to lower the sat fat to an acceptable level.

Spiked Hot Chocolate
This warming treat is the perfect accompaniment for a walk through the snow: A hint of peppermint schnapps will give everyone a little pep in their step. Think of it as more of a dessert than a beverage, as this hot chocolate is a bit of a splurge. Canned coconut milk gives it full-bodied richness and makes it an indulgence. Blogger and cookbook author Molly Yeh explains that "coconut goes well with chocolate and mint, so it really brings this hot chocolate together nicely."

Pfefferneusse
These traditional German Christmas cookies are made with chopped nuts, citrus, and a variety of warm spices, including the pepper that gives the cookies their name. Greenspan provides ingredient weights in grams, an approach we love because it's more precise than using ounces; a scale is key here.

Citrusy Gin and Blood Orange Punch
If the word "punch" makes you think of old-fashioned, too-sweet concoctions, this drink will be a revelation. Don't skip the oleo saccharum stage: The mix of oils and other citrus flavors that come from the muddling gives amazing body to the final drink.

Iced Whole-Wheat Sugar Cookies
Whole-wheat flour adds a layer of complexity to these cookies that all-purpose flour can't achieve; the wheat in the whole grain actually enhances the flavors of butter and vanilla. Unlike classic royal icing, which starts with a pound of powdered sugar, we use just 1/2 cup and thicken it with Greek yogurt. Looking for festive colors without the chemicals? Try naturally colored sparkling sugars (such as those from India Tree), which use colorants derived from plants.

Hasseltots with Crème Fraîche and Caviar
This two-bite, no-fork-required appetizer is perfect for parties where guests will be juggling drinks and nibbles. Choose a sustainable, budget-friendly roe. Depending on what kind you choose, it can be affordable or break the bank. Make note of the origin to be sure you aren't buying caviar or roe from endangered fishing areas or species. We suggest Classic American White Sturgeon Caviar ($85/oz.), Paddlefish Caviar ($44/oz.), Salmon Roe ($8/oz.), and Masago ($5/oz.). Store opened caviar on ice, and use within one to two days. In a pinch, sour cream can stand in for the crème fraîche.

Goat Cheese Queso Dip with Vegetable Chips
This warm, tangy twist on fundido is perfect with sparkling wine; the bubbles help cut through the richness. We pair with veggie chips, but you can also serve with crudités for a fresher take. The dip is very easy to put together. One note on mixing: Blend the beans until they are completely smooth and puréed for the silkiest, creamiest results. You can’t overblend it, but if you stop too soon, the dip might have a few lumps. The great thing about this dip is that it can be made ahead and rewarmed when you’re ready to serve it. To reheat, stir gently over low heat until hot. For an herby version, add a generous 1⁄4 cup of a mix of chopped herbs, such as parsley, chives, and a little basil.

Warm Spiced (and Spiked) Cabernet
Warm guests up with this sweet spiced wine punch. Whole cloves, orange slices, cinnamon sticks, and orange juice infuse the wine with citrusy flavor with a hint of spice, while two bottles of cabernet sauvignon and brandy make it especially boozy. Press cloves into the peel of quartered orange. Combine all ingredients in a medium saucepan. Bring to a simmer over medium heat (do not boil). Reduce heat to low, and cook 30 minutes. Garnish this punch with a cinnamon stick or orange slices. See our Apple Cider Recipes for more boozy winter drinks.
