I dig fruits and vegetables, and I eat them…A LOT. However, I am a vegan so that means I do not eat any animal products and need to be careful and really watch how I eat. It is very easy to “carb-up” on loads of potatoes when you are a vegan. And you can easily be a fat vegan (trust me on this).

So with this month’s challenge, I am trying hard to incorporate more colorful veggies like spinach and kale. I am also eating more fruit. I have an addiction to Satsuma oranges (and not just in a good sangria either). But so far, January's challenge has been going well.   

Are there any vegan readers out there? Any tips on incorporating the right fruits and veggies for a healthy diet?
