Slow and Steady: Good for Tortoises and Dieters
We’ve assembled a task force of staff from our Birmingham offices, which include sister brands Southern Living, Coastal Living, MyRecipes, and Oxmoor House, to try the Cooking Light Diet for 3 months and blog about it. Here’s what they’re saying.
I have been on the Cooking Light Diet for about two months now, and I am happy to report that it is going very well. When I first started, I was a bit intimidated by the amount of cooking I thought I would have to do. I’m a singleton, only cooking for one, and while I like cooking OK, I don’t love it. I don’t want to run home from work and do it every night.
After a couple of months on the Diet, I feel like I have really settled into a good diet groove. I have a few breakfasts (the Strawberry-Orange Smoothie and Oatmeal with Peanut Butter and Honey, to name a couple) and lunches (Tuscan Tuna Salad and Mediterranean Salad with Feta and Chickpeas) that I favor, and I’m familiar enough with those that I can shop for them and make them pretty easily. I try to branch out a bit more with dinner, but I can get away with cooking only two or three times a week. (Leftovers—I’m a big fan.) In the beginning, I was dazzled by all the photographs of beautiful food, and I felt like I should be making one of everything. With practice, I have gotten much better at whittling down my menu for the week and only buying and preparing what I really need.
If all that sounds too blue-sky optimistic for you, let me reassure you that I’ve been struggling mightily with all the Christmas candy recently. (Will it ever run out?) And I have definitely indulged. But luckily, it isn’t often that I’m surrounded by bowls of miniature Snickers bars. And even with all that hubbub going on around me, I have managed to lose 8 pounds. Slow and steady, but I hope that will mean I can maintain it. As long as I can step away from the Snickers.
