Something about packing lunch for work every day is just boring.. And if you do make lunch the morning of, it’s always the same sandwich or salad. Sometimes a little lunchtime inspiration is a necessity.

Luckily, we know where we can find inspiration in spades. We turned to members of the Cooking Light Diet Facebook Community and asked them to share their favorite packable lunches with us. Orange-Almond Chicken-and-Cabbage Bowls

This 12-minute meal uses supermarket shortcuts like rotisserie chicken, shredded coleslaw mix, and premade dressing for our quickest lunch yet.

Cooking Light Diet member Andrea Lee Carter says, “I made the Almond-Orange Chicken-and-Cabbage Bowl for lunch yesterday, and it was delicious...I would make this salad again! It was easy to prepare and Hubby liked it too.”

Greek Chicken and Barley Salad

Everything you love about a Greek salad—cucumber, tomatoes, feta cheese, and olives—are topped with an herb-and-lemon-infused dressing for a hearty grain bowl. Jenny Davis Burns says, “I've made the Greek Chicken and Barley Salad a couple times, and I love it.”

Mashed Chickpea Pitas

Shelly Grubman says this garlicky, creamy chickpea mixture is her favorite Cooking Light Diet lunch — and it’s easy to pack. Member Donna West agrees. She says, “We really liked all the flavors and textures...A very satisfying lunch.”

Apple, Almond, and Cheddar Sandwich

You’ll never turn to a PB&J again once you try this crazy combination of almond butter, apple slices, cheddar cheese, and ham. Member Caroline Young says, “I brought this today and it was perfect for a quick meal while I was on lunch duty with my first graders. I will definitely be making this again. I never would have thought to combine these items on my own, but somehow it works and it is really good!”

Chickpeas with Spiced Carrots, Dates, and Pistachios
