Sunday Strategist: A Week of Healthy Menus — September 8-12
Fall is in the air. OK, not really. It’s pretty sweltering down South, but Fall is on my mind, how about that. One thing is a sure bet: We’re all busy this time of year. Here’s a plan for next week using some of my favorite 5-ingredient Cooking Light recipes. You read that right. A short ingredient list means a short shopping list, and that sounds good to me.

Monday: To be honest, I'm probably going to make Posole on Sunday and have it ready for dinner after a long Monday. Quick soups are often overly salty thanks to convenience products. This recipe uses plenty of shortcut ingredients, but we’ve kept the sodium low. That’s an A+ in my books. Serve with a simple green salad.
Tuesday: Taco Tuesday is a hit at my house. I like to change up the fillings week to week, and Sautéed Tilapia Tacos with Grilled Peppers and Onion sneak in a serving of fish, too. Adjust the heat to taste, and serve with fresh fruit on the side.
Wednesday: Get a mid-week dose of comfort food with Gemelli with Broccoli Rabe, Bacon, and Chickpeas. Feel free to leave the bacon out to make this a vegetarian option.
Thursday: A few key ingredients bring on big flavor in Mushroom-Herb Chicken. You can substitute chicken broth for the dry sherry if this will save you an item on the shopping list, and serve with steamed broccoli and mashed potatoes. Make your own or save time with refrigerated mashed potatoes.
Friday: Friday is pizza night at our house, and Grilled Ham and Pineapple Pizza will please adults and kids. Grilling the ham and pineapple makes this special. If firing up a grill isn’t an option, a grill pan works.
Dessert: Homemade Dark Chocolate Sauce will dress up any simple dessert—ice cream, berries, or pound cake. I wouldn’t think twice about stirring this into a cold glass of milk. Full disclosure: This recipe is 1 ingredient over my 5-item limit, but I bet you have many of them on hand.
