Sunday Strategist: A Week of Healthy Menus—November 24-28
There’s no stopping it: The holidays are here! Thanksgiving is one of my favorite holidays, mostly because it’s a gift-free zone that’s all about family and food. I’m sure you’re all planned out for the big meal this Thursday (if you’re not, check out our complete Holiday Guide), so we’re going to focus this week’s Sunday Strategist on all the rest—weeknight meals, a company-worthy breakfast, and leftovers.

Monday: Warm up to a Meatless Monday bowl of Two-Bean Soup with Kale. You can substitute any canned beans you have on hand, and feel free to add rotisserie chicken or Italian sausage for a heartier dish. Serve with a mixed green salad, and save leftovers for lunch the rest of the week.
Tuesday: There’s something to be said for a simple chicken dinner the week of Thanksgiving. Chicken with Lemon-Leek Linguine takes just 30 minutes to prepare, and I personally enjoy pounding the chicken with a mallet. Call it early holiday stress relief.
Wednesday: Glazed Salmon with Couscous takes just 25 minutes to prepare, and it’s worthy of guests if you have company already coming in. Serve with simple steamed haricots verts and a glass of dry white wine.
Thursday: The turkey, dressing, sides, and pies might be prepped and ready, but what if you have a house full of hungry guests when the sun comes up? Be prepared with make-ahead Egg and Hash Brown Casserole. It’s like an omelet stuffed with spinach, mushrooms, bacon, and hash browns in one delicious dish. Serve with coffee and fruit salad, and send them away to watch the parade.
Friday: Still full? Lighten up the day after with Southwestern Cobb Salad, a great recipe to use that leftover turkey. Pile on vegetables you have from the crudité plate to up the nutrition factor.
