Monday: A power-packed, one-dish dinner is exactly what a Monday demands--and this Peppered White Bean, Kale, and Egg Stack delivers. Creamy, fiber-packed white beans team up with nutrient-dense kale and a delightful runny egg for a hearty, flavorful--and frankly, beautiful-- vegetarian dish. A sprinkling of leafy herbs for bright, fresh flavor and some Parmesan for a salty-savory kick are the perfect finishing touches. Serve with a hunk of buttered whole-grain toast, and you're ready to take on the week.
Peppered White Bean, Kale, and Egg StackTuesday: Oh hey, taco Tuesday. The succulent shredded spiced pork is great, but the accouterments are arguably what make these vibrant Shredded Pork and Pinto Tacos. Pumpkin seeds provide just the right amount of added crunch and nutty substance to the bright, tangy cabbage slaw; added bonus, the pepitas make for an awesome snack or salad topper, so enjoy munching on those this week.
