Sunday Strategist: A Week of Healthy Menus — December 9 - 13
So the holidays are upon us. I for one am trying to keep my jingle bells ringing, but every year I let the fun of the season get reduced to action items on to-lists. One thing that's first to slip: home-cooked weeknight meals. The cookies, party platter, and turkey are all planned for, but what’s for dinner tonight? For that reason, this week’s Sunday Strategist is getting a dose of Superfast—that means every meal will be ready in 20 minutes or less. I count two solid reasons for fitting in a weeknight plan. First, save your indulgent calories for something else! Plan a healthy menu, skip the drive-through, and enjoy an indulgent holiday treat when you’re mindfully digging in. Second, spending time with your loved ones at the dinner table—especially around the busy holiday season—will hopefully keep priorities in check. Here are five ideas for dinner this week (plus a party appetizer bonus to keep those bells a-jingling).

Monday: Insert a heaping helping of vegetables into this Meatless Monday with White Bean and Spinach Tacos, and reset from the heavy holiday foods you probably ate over the weekend. Omit the jalapeño for kids, and add more for heat-seekers.
Tuesday: I bet you didn’t think homemade soup was in the less-than-20-minutes plan? Basic tomato soup gets a flavor makeover in Tomato Soup with Chicken and Gorgonzola Cheese. Substitute feta for blue cheese skeptics.
Wednesday: Grilled Steak with Baby Arugula and Parmesan Salad honors the goal of keeping this week light, but cures your cravings with steak and shaves of Parmesan cheese. Baby, I know it’s cold outside, so pull out that handy grill pan.
Thursday: Spicy Shrimp and Grits in 20 minutes? That’s all this Southern girl needs to here. Dinner is served with a simple side salad.
Friday: Skip take-out and make your own Honey Cashew Chicken with Rice. The ingredient list might look daunting, but once you have the basics for a good stir-fry, you can add this to your weekly line-up and make any of our 20-Minute Stir-Fries and Sauté recipes.
Holiday Appetizer Bonus: Since it is the holiday season, we’re throwing in a bonus 20-minute appetizer. Please party goers or hungry pop-in guests with Artichoke and Fennel Caponata heaped on toasted baguette slices.
