Sunday Strategist: A Week of Healthy Menus — December 16-20
Here, another week’s worth of fast, healthy, and tasty menus. It’s not the dread of cooking that deters so many of us from the kitchen each night; it’s actually deciding what to cook from the millions of options bombarding us from so many different places. Here, we’ve done the planning for you. Not just menus, but healthy menus that are fast—on the table in less than 45 minutes.

Monday: I love an easy dinner on a Monday night and this comforting grilled cheese sandwich fits the bill perfectly. Even better, it sneaks in a bit of super-healthy kale into your meal. Serve with tomato soup for the perfect winter-weather combo.
Tuesday: Give pork a try for Taco Tuesday this week. This quick and easy recipe gets loads of fresh flavor from cilantro and lime, and a hit of smokiness from chipotle chiles. Serve with an avocado-tomato salad to round out the plate.
Wednesday: Yesterday's extra avocado and tomatoes get tossed into this hearty riff on Cobb salad. This superfast salad comes together from start to finish in just 20 minutes—no side dish needed.
Thursday: Another Superfast favorite, butternut squash soup goes Thai with the addition of curry paste, coconut milk, fish sauce, and a sprinkling of cilantro. Watch how to make this 20-minute soup in our new video.
Friday: Close out the week with a cracker-crisp white pizza. Tip: Heating a cookie sheet in the oven before you put the pizza on it gives you a perfectly crispy crust. Serve with a basic side salad.
