Here, another week’s worth of fast, healthy, and tasty menus. It’s not the love of cooking that deters so many of us from the kitchen each night; it’s actually deciding what to cook from the millions of options bombarding us from so many different places. Here, we’ve done the planning for you. Not just menus, but healthy menus that are fast—on the table in less than 45 minutes.

Monday: Mondays are crazy enough. Let's not further complicate it with a fussy dinner. Our Open-Faced Eggplant Sandwiches are superfast, ready in 20 minutes. Multi-task to speed everything up and toast your bread slices while the eggplant slices broil. This is prime eggplant season, so you're bound to find some real beauties at your grocery store or farmers' market. Mmmm... a delicious - and fast - Meatless Monday! We'll use some more of the marinara sauce later this week, so be sure to save it.

If you feel like you need a side dish with this, try a simple green salad with your favorite vinaigrette - or use the freshest, most beautiful grape tomatoes you can buy and stir together this quick Tomato, Sweet Onion, and Parsley Salad.

Tuesday: Tuesdays are typically reserved for tacos. Let's keep the south-of-the-border feel but without the tortillas with our Tex-Mex Rice Bowls. They're ready in - get this - 11 minutes. Yes, 11 minutes! Thanks to pre-cooked rice, this dinner will come together very quickly. Serve with a side salad, or jazz your simple greens up with some avocado, onion, and a quick homemade vinaigrette. Try our Avocado-Butter Lettuce Salad.

Wednesday: This middle of your week can feel truly decadent without a lot of effort with Michael Symon's Grilled Salmon and Zucchini Salad. This dish is perfect for a busy weeknight or for your next dinner party. It's fast - ready in 10 minutes if you use an indoor grill pan or 20 minutes if you need to heat up your grill outside. No need for an additional side either; this recipe makes its own delicious zucchini salad. Pick up a few extra zucchini. We'll use them on Friday.

Thursday: Sandwiches can feel, well, sorta sad, especially at dinner. But not these Italian Sausage Hoagies. They're filling and hearty, and again, they're ready in less than 30 minutes. Use the leftover low-sodium marinara sauce from Monday's dinner here. Can't find a low-sodium marinara at the grocery? We found two tasty options you can try. Serve with Garlic and Herb Oven Fries. Start them first. Once they're in the oven and broiling, start on the hoagies.

Friday: Kick up a basic pork tenderloin with a sweet-sour marinade of ginger and honey. Add a nice charred, smoky flavor from outdoor grilling. (The instructions call for using a grill pan on your stove. You can easily move this outside.) Try our Pan-Grilled Ginger-Honey Pork Tenderloin. Right before the pork is done, throw together the ingredients for Grilled Zucchini with Sea Salt. You can cook them on the outdoor grill, too.

If you want a heartier side, try our Sour Cream-Dill Potato Salad. It combines fresh dill, Greek yogurt, and cucumber, and is ready in just 20 minutes.
