The best start to any day is a wholesome breakfast that helps you power through your work day—and we all love a meal that can be made ahead, too. Which is why we're not too shocked that this eggscellent mini quiche recipe is blazing its way to the top of Pinterest charts.

This now-viral recipe for an egg "muffin" comes from the blog Life Made Sweeter, published by cookbook author Kelly Kwok, who has previously been named to best-of lists by The Washington Post. It's a super simple hack that lets you make an entire week's batch at once. Simply take them out of your fridge or freezer and reheat them for breakfast on the go.

Kwok describes them as "mini personal-size frittatas," a good indicator of just how customizable the recipe actually is. You can stuff these mini quiches with as many veggies and proteins as you'd like—and if you leave cheese out, the recipe is also paleo-friendly.

Kwok's recipe is one of many that are trending on Pinterest due to social media users' increasing interest in the keto diet—a nearly 1,000 percent increase since last year, according to Today. Pins, or saves, of egg recipes have also surged by 45 percent overall, a good sign since the latest research suggests that eggs aren't harmful for your diet.
