Extra steak is a treat because it's so easy to slice up and toss in so many different dishes. Lots of these recipes begin with grilling or pan-cooking your steak -- do that if you've got raw meat on hand, or skip to the next step if you've already got yours cooked. Reheating cooked steak can end in rubbery meat. For best results in these recipes, let the steak come to room temperature before adding to the dish.

These fun bites pair soy- and ginger-marinated flank steak with creamy wasabi mayo and super-crisp rice crackers. You can prepare the mayonnaise mixture and cook the steak up to a day in advance of your gathering. Wrap the steak, still whole, in plastic wrap, and refrigerate. There's no need to reheat it; just slice the steak about an hour ahead, and leave at room temperature. Assemble the crisps about 30 minutes before guests arrive. If you can’t find rice crackers on the cracker aisle of your grocery store, look in the Asian foods section; in a pinch, you can substitute baguette slices.
