"Chewy Coconut Granola Bars are really easy to make. I whipped them up for my Girl Scout meeting, and everyone loved them (even the adults!). I also took some to school for lunch—yum! They make a great after-school snack and could even be eaten for breakfast if you are in a hurry. The bars are soft and gooey on the inside but have a nice crunch on the outside. I liked the combination of fruit and granola, which created different textures when I bit in. If you are not a big coconut fan, try using organic coconut in place of sweetened. It's not as sweet and the coconut flavor isn't as strong, so it's a great option for those who don't like too much coconut. But both options taste great. Trust me, these bars won't last long, so you might want to double the recipe!"
