This Hydrating Shrimp and Melon Dinner Is Perfect for Hot Summer Nights
My favorite season is summer.
There’s nothing better than grilling and eating outside after a long day of working indoors. And even though this time of year means that my kids are out of school and I try to work less, I still put in a few full days a week. So when the kids come back to the house starving after playing for hours, I love to grill them something tasty, fresh, and hydrating—and, of course, fast.
I have a go-to dish that checks all of those boxes. It’s on the table in less than 30 minutes, and it combines beautiful colors, healthy nutrients, and summer flavors. It’s light, it’s refreshing, and the colorful melon balls make me giddy because they take advantage of the season’s fresh, ripe produce. It’s a summer slam dunk!
I use my melon baller to make bite-size balls (be sure to not use a mini ice cream scoop, which has a release in the scoop). Instead of using a melon baller, you could also cut the fruit into fun shapes with a cookie cutter—like stars for the Fourth of July. Or keep things casual and easy with classic cubes.
