Crispy bits of Mexican chorizo (fresh, crumbly sausage — not to be confused with Spanish chorizo) create a delicious topping for this sweet-spicy take on mac and cheese. There's a fair amount of heat here, so for mild palates and kids, use less chipotle.

Sweet Potato Gnocchi

Using white sweet potatoes in place of starchy russet potatoes makes this gnocchi dough more forgiving if overworked. The dumplings won’t overcook as easily, and the result feels lighter in your happy belly. This recipe makes loads of the fresh dumplings, so you can cook half tonight and freeze the rest for another time. Kids love them in a cheesy sauce or marinara.

Hasselback Sweet Potatoes

Here’s a spin on a typical baked sweet potato: Turn it into a gorgeous hasselback sweet potato and drizzle it with smoky chipotle cream. The accordion-like cuts give the potato some crispy outer edges, keeping the insides moist and soft. They also turn it into a pull-apart dish that’s super fun to eat.

Air Fryer Sweet Potato Tots

View Recipe: Air Fryer Sweet Potato Tots

Sweet potato tots are a great way to sneak veggies into a picky eater’s meal—and this homemade version is more affordable than buying pre-made, frozen sweet potato tots. Cooking them in the air fryer yields a slightly crisp exterior and a soft interior. We suggest you spray the tots with cooking spray helps to help with browning. Be sure to boil the sweet potatoes just enough that they grate and hold together when shaped, but still retain a little texture.
