Foodies and math geeks everywhere, rejoice! It's National Pi Day. (Get it? March 14 or 3.14, the ratio of a circle's circumference to its diameter. Wikipedia has a great visual for understanding where pi gets its number.)
Or it's National Pie Day for those of us who prefer our circles filled with warm apples and flaky crusts. In honor of this number-filled fun, we're sharing our favorite pie recipes. Get more healthy pie recipes, and share your favorite pie in the comments.
Malt Shop Ice Cream Pie"I am a sucker for a vanilla malt, and this frozen pie has it (plus strawberry malt, too). But the real star here is that crust: crushed sugar cone crumbs that are sweet and fantastically crunchy. It's a cinch to put together, too."- Ann Taylor Pittman, Executive Editor, Food
Lemon-Buttermilk Chess Pie"Flashback! I love this pie (yes, it's from 1999). Sure, I sometimes cheat with a store-bought crust, but the filling is great. My Southern grandmother's recipe calls for a half stick of butter in the filling. This is a great update without anyone really knowing it's lighter."- Allison Lowery, Editor, CookingLight.com
Classic Pumpkin Pie"Best served cold, the next day and while standing in front of the fridge."- Adam Hickman, Recipe Tester and Developer
Adreena Barmakian and Jayne Cohen's Apple Pie"For traditional apple pie, I love Adreena Barmakian and Jayne Cohen's Apple Pie (I cheat with store-bought crust, though..shhh)."- Mallory Brasseale, Associate Editor/Producer, CookingLight.com
Frozen Peanut Butter Pie"The Frozen Peanut Butter Pie is my favorite for nostalgic reasons. My mom used to make Frozen Peanut Butter Pie all the time when I was younger. It was delicious, but so bad for us. She stopped making it because of that. Now we have a much healthier version that is easy to make and yummy!"- Liz Rhoades, Production Director
Do you like your pies more on the savory side? We have a few of those, too.
Senior Editor Cindy Hatcher recommends the Buttercrust Corn Pie with Fresh Tomato Salsa.
Sure, it's not an actual pie, but the word is in the name, and that's good enough for me. I love this Chili-Corn Chip Pie. It's childhood nostalgia meets corn chipy goodness. Mix it in a single-serve bag of corn chips, and eat it straight from the bag. Yes, straight from the bag.
