My favorite season is summer: The weather is warmer, the days are longer, and, oh, how I love farm stands and fresh summer produce. Summer is also prime grilling season, and that means one thing: Meals get a lot tastier. We use the grill all summer long; there’s just something about a smoky-flavored meal, like these grilled Mexican street food–inspired tacos, that makes dinnertime so satisfying—especially when eaten alfresco.

And when you’re looking to please a house full of picky eaters with varying tastes, tacos are a real winner because they offer an easy way to satisfy everyone. They’re also great if you’re feeding someone with a food allergy; with a few easy tweaks, you can make one dish that makes everyone happy.

My daughter loves corn tortillas, but if your kids don’t, try crispy taco shells, lettuce wraps, or flour tortillas. You can swap chicken for steak and grill plain corn on the side for finicky palates. I also set out lots of toppings (cheese, shredded lettuce, tomatoes, and avocado) and let everyone build their own custom tacos.
