Pumpkinseeds Add Punch
Pumpkinseeds, or pepitas, are a popular ingredient in Mexican cooking. You can buy them in a variety of forms; salted, unsalted, roasted, raw, with or without hulls. With the white hull removed, they are medium-dark green and have a delicious flavor.
Look for pumpkinseeds in health food stores, Mexican markets, and supermarkets. Then top our Chipotle-Corn Chili with a handful of these seeds to enhance its already robust taste. The chipotle salsa also adds a smoky, sweet flavor to the chili, but you can use any type of chunky salsa.
End the meal with luscious Caramel Sundaes, which couldn't be easier to fix! In fact, the whole menu plan can be broken down into four simple steps:
1. Brown meat for chili.
2. Toast pumpkinseeds, if desired, in a nonstick skillet over medium heat for about 3 minutes or until lightly browned.
3. Cook chili.
4. Prepare sundaes just before serving.
Set out a bowl of low-fat tortilla chips to help scoop up the chunky chili, and you're ready to call the gang to the table!
