Make this healthy veggie board for any festive fall gathering.
Here at Cooking Light, we love a good holiday spread, and it’s no secret we’re big fans of #snackdinner. So when our video director, Rebecca Pugh, came up with the brilliant idea of a healthy turkey veggie plate, we couldn’t wait to gobble up her creation.
The best thing about this handsome platter is that it uses veggies you’ll likely have on hand for cooking up your Thanksgiving spread. Got a few extra pieces of broccoli and some carrots? This is perhaps the most adorable way to use up those odds and ends.
The simple “recipe” is as follows:
Start with a small bowl of hummus or another healthy dip of your choice. Then, you’ll need:
- 1 cucumber
- 1 small bag of celery (or cut your own sticks)
- 1 small bag of baby carrots (or cut your own)
- 1 red bell pepper
- 1 orange bell pepper
- ½ head of cauliflower
- ½ head of broccoli
- A handful of almonds
- 1 box whole grain crackers
- 1 small berry (we used a blueberry)
As you’ll see in our video, the almonds make the neck, and the crackers make the body, and head. Use one small piece of yellow pepper for the tiny beak and one blueberry (or another small berry) for the eye. Arrange the veggies as you wish for the tail.
