I recently got an air fryer, and I’m borderline obsessed.

Making fries like these is only one of the many reasons why. If you’re wondering if you need yet another gadget in your kitchen, my answer is: absolutely. The air fryer gives food that crispy layer similar to frying, but with much less oil and in a fraction of the time it would take to bake. In this recipe, the potatoes are seasoned and air-fried until golden with a perfect crust. For those who don’t have an air fryer (yet!), I’ve included oven directions with the recipe, too.

Air fryer aside, it’s the toppings that bring this dish together. First, there’s feta cheese—I buy a big block of fresh feta and grate it to get fine shreds that soften and melt on the hot potatoes. Next is tzatziki—store-bought or homemade—which is like the gravy to poutine or the chili to chili cheese fries, only it’s fresher and lighter. Then shredded chicken turns it into a meal. And for a final, colorful, fresh touch: tomatoes, red onion, and fresh herbs. If loaded fries were actually a thing in Greece, I think they would look a lot like this.

This dish gets tons of flavor from the spices. If your fresh oregano is strong, start with less than what’s called for and add more to taste. To speed things up, prep all the ingredients in advance so you can assemble quickly while the fries are still hot.

No air fryer? Spread potatoes on a baking sheet coated with cooking spray; bake 10 minutes at 450°F. Flip fries, and bake until crisp and brown, 10 to 15 minutes.
