If you're following along on my juice revelation, welcome to Day 2, featuring another fantastic juice with the Breville Juice Fountain Plus. Today we take a look at arguably the most perfect juicing vegetable ever: The Carrot.

Sweet, nutrient-rich, and super easy to juice, the carrot is a juicer's best friend. Make sure you leave the skins on--that's where a lot of your essential vitamins are. As long as you scrub the carrots with a soft-bristled vegetable brush, you should be good to go. Also, splurge for organic carrots. They were once never on my radar, but now I'm a total convert. Like milk, organic carrots just taste better. You can actually tell the difference between conventional and organic carrots. Don't believe me? Try some for yourself.

Trifecta JuiceEarthy carrots are paired with a sweet apple and given a little kick with a knob of ginger. Ginger keeps in the fridge for a week or so, and you can always buy just the exact amount you want at the store, even if it is still arranged in large root clumps.

2 large organic carrots, skins on1 whole gala apple, skins on, stem removed1 inch ginger, peeled

1. Turn your juicer to high speed. Slowly insert all ingredients through the chute. Don’t worry about the seeds in your apple. The juicer will take care of it for you! Turn off the juicer after all ingredients have passed through the machine.

2. Drink immediately on ice, or store in sealed mason jars for up to 24 hours.
