By now, you or someone you know has been directly or indirectly affected by the coronavirus. It's certainly had an impact on the way we shop for food, when we shop, and whether we're able to procure certain items. Seriously, who among us could've accurately predicted that in the year 2020, flying cars still wouldn't be a thing but hoarding toilet paper would? Hindsight, folks.
But I digress. What do you feed yourself when you're self-isolating? A case of SpaghettiO's can only go so far, after all. That's why we asked Cooking Light Diet Community members what meals they're making at home right now and what recipes they would eat over and over again if they could only pick one to get them through a long stint stuck at home. We've compiled some of their responses below, including the Quick BBQ Chicken Pizza featured in the image above. We definitely understand if you're currently unable to find all the necessary ingredients to make some of these dishes, and the folks in that Community group can happily provide tips on substitutes, alternative recipes, or what they've done to make the meals from their Cooking Light Diet subscriptions during this time. And in times of crisis—especially one that involves social distancing—a supportive, welcoming online community that is cooking together is something we all could use more of.
