Pass the Potatoes, Please!
As soon as Autumn’s chill hits the air, a little switch in my brain flips and I start to crave anything potato. Don’t get me wrong, in the warmer months I love a good grilled potato tossed with herbs and a drizzle of olive oil or a new potato salad dressed with a tangy yogurt sauce. But there’s nothing like a potato casserole or a bowl of fluffy mashed spuds to satisfy me during comfort food season. Potatoes sometimes get a bad rap, but they are rich in vitamin C and one medium potato has twice the potassium of a banana.
Gratin might be my favorite way to eat potatoes come Fall. Using big-flavored cheeses like gruyere and Parm means you don’t have to pile it on – a little will go a long way.
If you like to mix it up—go with half sweet potato for a pretty and richly flavored casserole.
