If you ask my friends, they'll tell you a truth that I can't easily hide: I love a good theme. In recent months, I've thrown theme parties for FrozenThe Lego Movie, and, my personal favorite, Jimmy Fallon. (We were meant to be life-long best friends. We just haven't met yet, but when we do...) Holidays are, of course, no exception.

When the dawn breaks on Independence Day, I want to go red, white, and blue until the last firework has cracked in Alaska. Naturally, that means breakfast has to be patriotic, too. That's how these adorable Mini Red, White, and Blue Pancakes were born. They require very little effort, not much more than what you'd put into a normal pancake breakfast. And the result? So much cuter with a whole heap of Americana.

IngredientsPancake batter (I suggest our Buttermilk Pancakes.)BlueberriesBananasStrawberries or RaspberriesWhipped cream (Maybe try our Lighter Whipped Cream.)

Instructions

1. Spoon or pour prepared pancake batter into silver dollar-sized circles onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Cook three to four minutes or until the top side is bubbling and the edges look cooked. Flip, then finish cooking three to four minutes, or until desired degree of doneness.

2. Halve blueberries. Slice strawberries and bananas. Whip cream. (You can use your own recipe for homemade whipped cream. I usually add a touch of sugar and some fresh vanilla bean seeds if I have a bean on hand.)

3. Top each pancake with halved blueberries. Top blueberries with another pancake and sliced bananas. Top bananas with a third pancake and sliced strawberries. Finish with a dollop of whipped cream, and then push a food pick into the center of the stack.

Serve on a platter in the center of your breakfast table, which should also be decorated with beautiful dip dye patriotic linens.
