Fresh, crunchy, herby, juicy—this salad gets high marks for hitting all kinds of pleasure points. Feel free to use any types of tomatoes you find at your farmers market or in your own backyard garden; they’ll all taste great here. Allowing them to sit for a few minutes in the dressing releases some of their juices, making more a more flavorful salad. Little Gem lettuce, resembling baby romaine heads, is sweet, crisp, and mildly flavored, not to mention absolutely gorgeous. But as with the tomatoes, any lettuce will work here, especially one with a sweet, mild flavor such as Bibb or romaine.
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons white wine vinegar or fresh lemon juice
1 1/2 teaspoons minced shallot
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups halved red cherry tomatoes
1 medium-size ripe green tomato, sliced
2 cups torn hearts of romaine or Little Gem lettuce leaves
1 cup fresh basil leaves

How to Make It
Combine first 6 ingredients in a large bowl, stirring with a whisk. Add cherry tomatoes and green tomato; toss gently to coat. Let stand 5 minutes. Add lettuce and basil; toss gently to combine.
