Shaved Squash-and-Radish Salad

If you don’t have Champagne vinegar, use white balsamic vinegar or red or white wine vinegar combined with a dash of granulated sugar.

Ingredients

  • 1 medium zucchini
  • 1 medium yellow squash
  • 1/2 cup thinly sliced radishes
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons Champagne vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

How to Make It

  1. Using a vegetable peeler, shave zucchini and yellow squash into strips (about 1 cup zucchini and 1 cup yellow squash).

  2. Combine zucchini, squash, radishes, and remaining ingredients in a bowl; toss gently to coat. Serve immediately.
