Mocha Pudding with Red Wine Jelly

Wow your dinner party guests with grown-up parfaits that feature rich, silky pudding topped with a decadent boozy layer. Check out the video to see how to make them. For this version, use the Mocha Pudding recipe, but chill it instead of serving it warm.

Ingredients

  • Mocha Pudding (see note above)
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons water
  • 1 cup syrah, zinfandel, or other spicy, fruity red wine
  • 2 tablespoons sugar

How to Make It

  1. Make pudding and chill until set.
  2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.
  3. Combine wine and sugar in a small saucepan; bring to a simmer, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.
