Miso-Glazed Banana and Bacon Overnight Oats

Get a rockin’ start to your day with our Elvis-inspired savory overnight oats recipe. Miso adds worlds of savory depth to caramelized bananas and crispy bits of bacon. Add any combination of nuts and seeds you like for a crunchy contrast. 

Ingredients

  • 2 teaspoons white miso
  • 1 tablespoon water
  • 2 teaspoons sesame oil
  • 3/4 ounce diced bacon or pancetta
  • 1 small banana, sliced crosswise
  • 1 tablespoon pumpkin seeds
  • Basic Overnight Oats
  • 1/2 teaspoon sesame seeds

How to Make It

  1. Mix miso and water in a small bowl. Set aside.
  2. Heat oil in a large skillet over medium heat. Add bacon and banana slices; cook 4-5 minutes, turning banana slices once halfway through. Add miso mixture and pumpkin seeds to pan, tossing to coat. Cook 1 minute longer. Remove from heat.
  3. Top oats evenly with miso-glazed banana and bacon mixture. Sprinkle sesame seeds evenly overtop.
