Mini Popcorn Sundaes

Serves 2 

Everybody loves a good sundae, especially when it takes just moments to make. Layering together bits of cookie, ice cream, and flavored popcorn create a dessert that pops with flavors and textures. 


  • 1/2 cup vanilla bean ice cream
  • 1 gingersnap cookie, crushed
  • 1/4 cup low-fat Holiday Drizzle popcorn, such as Boom Chicka Pop
  • Raspberries, for garnish
  • Mint leaves, for garnish

How to Make It

  1. In a small bowl, press crushed cookies into the bottom to create a crust.
  2. Add popcorn and ice cream and garnish with raspberries and mint.
