Maple-Bacon Kale Salad

  • 2 bacon slices, chopped
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons grainy mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 ounces sliced lacinato kale (about 6 lightly packed cups)

How to Make It

  1. Cook chopped bacon slices in a small skillet over medium until crisp; remove bacon, reserving 1 Tbsp. drippings in pan. Over low heat, whisk in vinegar, maple syrup, olive oil, mustard, salt, and pepper. Toss warm dressing with kale; sprinkle evenly with bacon.
