This staff favorite uses frozen peas for a fresh pop of flavor and color.
1 1/2 cups coarsely mashed thawed frozen green peas
3/4 cup whole-wheat panko
1/2 cup chopped green onions
1 teaspoon garam masala
3/4 teaspoon kosher salt
1/4 teaspoon ground red pepper
2 large eggs
2 tablespoons canola oil
1/4 cup plain 2% reduced-fat Greek yogurt

How to Make It
Combine peas, panko, green onions, garam masala, salt, ground red pepper, and eggs. Heat canola oil in a nonstick skillet over medium-high. Scoop mixture by 1/4-cupfuls into pan to form 4 fritters; cook 3 minutes per side. Repeat. Serve with yogurt.
