Indian-Spiced Pea Fritters

Serves 4 (serving size: 2 fritters and 1 tbsp. yogurt)

This staff favorite uses frozen peas for a fresh pop of flavor and color. 

Ingredients

  • 1 1/2 cups coarsely mashed thawed frozen green peas
  • 3/4 cup whole-wheat panko
  • 1/2 cup chopped green onions
  • 1 teaspoon garam masala
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground red pepper
  • 2 large eggs
  • 2 tablespoons canola oil
  • 1/4 cup plain 2% reduced-fat Greek yogurt

How to Make It

  1. Combine peas, panko, green onions, garam masala, salt, ground red pepper, and eggs. Heat canola oil in a nonstick skillet over medium-high. Scoop mixture by 1/4-cupfuls into pan to form 4 fritters; cook 3 minutes per side. Repeat. Serve with yogurt.
