Ingredients

  • Citrus Pudding (see note above)
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons fresh lime juice
  • 1/2 cup water
  • 1/3 cup tequila
  • 2 tablespoons sugar

How to Make It

  1. Make pudding and chill until set.
  2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.
  3. Combine water, tequila, and sugar in a small saucepan; bring to a simmer, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.
