  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon cornstarch
  • 3 tablespoons part-skim ricotta cheese
  • 1 (1-oz.) slice whole-grain bread, toasted
  • 2 teaspoons chopped pistachios

How to Make It

  1. Place cherries and rind in a microwave-safe bowl; sprinkle with cornstarch. Microwave at HIGH 3 minutes, stirring after 90 seconds. Cool 10 minutes.
